Now that the babies are eating real food, I'll be sharing some of our favorite things to eat. I'm going to start with the twins' favorite food. We started introducing solid foods a few weeks ago so they haven't had too many choices yet but the current front runner is butternut squash!
I wanted to make their food and since it's the season for winter squash, I decided to start with butternut squash. It was also very convenient because our Whole Foods sells peeled, cut, organic butternut squash.
First, I steamed the squash on the stove in a steamer basket. When it was soft, I threw it in our Vitamix and blended it until it was smooth. One package of peeled, cut squash made about 2.5 cups of pureed squash.
Next, I spooned the puree into large ice cube trays.
I put the ice cube tray in the freezer and when the butternut squash was frozen, I popped out the cubes to store in a ziploc bag for easy access.
When I want to feed the twins butternut squash, I just grab a cube for each of them and defrost them!
These 2 ounce cubes are the perfect amount for my beginning eaters and as they eat bigger meals, I can take out additional puree cubes. It didn't take long to make 8 servings and at $3.49, it came out to about $0.44 each. In the future, I'll probably make a double batch since I know they like it.
I repeated this steam-puree-freeze process with peas, carrots, green beans, and sweet potato so they have a nice range of foods in the freezer. I can't wait to add in more foods and start mixing flavors!
